Thanks for that screenshot. Seems ScreenFlow is not seeing your monitor. I'd like to help but I'd need complete technical information. Please read READ BEFORE POSTING at the top of this product forum and I'll help you trouble shoot this.

CraigS , does a monitor have to be plugged in, in order for Screenflow 7 to work?
I'm using VNC to remote into my MacMini Server.

gabe garza because ScreenFlow captures the monitor through OS and GPU interaction.
If you're just edited imported file or capture a webcam or audio source you could try creating a blank document.
If you want to capture something "displayed" it needs to be displayed by the GPU.
