Rendezvous - Choppy Audio on Livestream

I've been running some tests with 3 - 4 guests for an upcoming virtual event. Overall on the surface, Rendezvous seems to be handling it well for the most, all my guests can hear each other and are talking fine on the Rendezvous dashboard.
Occasionally there will be a little choppiness on video or audio but usually minor and par for the course with video conferencing tech.

But for some reason the actual live stream itself seems to have some serious audio drop out and blips every so often which makes it painful to listen to.

See example here: https://vimeo.com/464794710/9fb3ced3bd. (blurred video for privacy)

I'm on Wirecast 14.0.1

iMac Late 2015

4 GHz Quad-Core Intel Core i7

32 GB 1867 MHz DDR3

AMD Radeon R9 M395X 4 GB

Internet Speed: 250 mbps up/down

Output settings: 1280x720 30fps, 4000kbps

My CPU usage peaked around 70% at one point but mostly is was around 50% I think.

3  guests were using Chrome to join, One was using Wirecast Go - All had at least 100mbps down/40mbps up

Initially I though it might have something to do with one of the guests mic, but we did a test on StreamYard and we did not run into any audio issues.

Anyone else have this same issue? What could it be? We have a rehearsal coming up on Tuesday with 2 live guests + me (tech director) and our program director on Rendezvous and this is making me quite nervous.
